I’m excited to begin posting recipes! I’ll will try to post a large variety of recipes to help those in all phases of the program. For now, here is just a couple yummy cauliflower recipes to kick things off!

Cauliflower Crust Pizza!

(Lean & Green)

1.5 cup Cooked Cauliflower, frozen (you can substitute half a cup for 1/2 c tomato sauce if you want to put some of the cheese on top/add toppings)

7 Egg Whites (approximately 1 cup egg beaters)

0.7 cup low fat Mozzarella Cheese, Finely Shredded (<6g fat per serving)

0.2 c Parmesan Cheese, Grated
 

Directions:
Mix the cauliflower in a food processor until all the lumps are gone.
Add this to a mixing bowl and mash all other ingredients together (like meatloaf).
Then turn out the mixture in a half size cookie sheet or 9×13 pan with parchment paper/aluminum foil.
Bake 20 min at 425 degrees.
Then you can add toppings/sauce and bake another 5 min.
(Optional) flip and bake an additional 10 min for a crispier crust.

Cauliflower Poppers

* 1 head cauliflower

* 1/2 teaspoon ground cumin

* 1/2 teaspoon chili powder (to taste)

* 1/2 teaspoon salt

* 1/2 teaspoon black pepper

* cooking spray

Directions:

Preheat oven to 400*. Cut cauliflower into florets and place in a bowl.  Add cumin, chili powder, salt and pepper OR Seasoning Salt or any favorite spice. Toss well to coat. 1 TBSP Virgin Organic Cold pressed Coconut Oil. ( Ideal for cooking and sauteeing) NOT OLIVE OIL (only for non-cooking needs) Spread cauliflower on sheet and bake until tender, about 10 minutes, stirring once during baking.

Makes about 8 – 1/2 cup servings .
